I was just thinking about what to make for the team potluck next week. I remember Sarah mentioned she loved that pasta salad I brought last summer. Maybe I should do that again, but with a twist. A hearty vegetable soup would be good. I have that recipe with lentils and carrots. It’s very filling. Wednesday is usually busy, so something quick like sandwiches or leftovers. Thursday I have more time, maybe try a new recipe. I saw one for a baked chicken with herbs that looked straightforward. Need to check if we have chicken in the freezer. I believe there’s a pack of thighs. That should work. Friday is often pizza night, homemade of course. The dough is easy to make if I remember to start it in the morning. The kids like to add their own toppings. We need to restock on mozzarella. I’ll add that too. Saturday might be a good day for grilling if the weather holds. Burgers or maybe some salmon fillets. We haven’t had fish in a while. I’ll see what looks fresh at the counter. Sunday dinner is usually a bigger affair. Perhaps a roast chicken with potatoes and green beans. That always feels like a proper end to the weekend. Leftovers are great for lunches. I should also think about breakfasts. Oatmeal is a staple, but maybe some homemade muffins for a change.
