Yes, I think starting with a dry brine the night before makes a noticeable difference. I usually season the roast with kosher salt and a bit of black pepper about twelve hours ahead and leave it uncovered in the fridge. The surface dries out which helps form a better crust during roasting. I set the oven to 450 for the first twenty minutes then drop it to 325 and let it go until the center reads about 130 for medium rare. I rest it for at least twenty minutes before slicing. The pan juices can be used for a quick sauce with some broth and a splash of wine if you have any open. I found that a simple herb rub with thyme and rosemary adds good flavor without overwhelming the meat. Let me know if you want specific timing for a larger cut or if you are cooking for a crowd because the resting time changes a bit with more weight.

Also, I usually place the roast on a wire rack inside the pan so the heat circulates evenly underneath. That step helps avoid any soggy spots on the bottom. If you do not have a rack, some thick carrot or onion slices work as a makeshift base and add a little aroma to the drippings. I am happy to share a full timeline if you need one.

We ended up going with the navy paint for the hallway after all and I think it was the right choice. The sample looked a bit dark on the swatch but once it dried on the wall it opened up nicely. The natural light from the front windows helps a lot. We used a satin finish so it is easy to wipe down because that hallway gets a lot of traffic from the mudroom. The painter suggested we do two coats and use a primer first since the old color was a warmer beige. I am planning to do the trim in a crisp white with a semi-gloss to give it some contrast. The whole project should take about three days once we get started. Let me know if you want the name of the paint color because I have the can in the garage and can check it later.

I also picked up a new ceiling fixture for that space. It is a simple flush mount with a frosted glass shade that should give good ambient light without being too harsh. I will send a photo once it is installed if you want to see how it looks with the wall color.
