Yes I think the lake house is the best choice for the weekend trip. The forecast looks good and the water levels have recovered from all that rain we had. The sourdough starter is finally ready to use after about two weeks of daily feedings. I used a mix of whole wheat and all purpose flour and it has a nice tangy smell now. The first loaf was decent but the crumb was a bit dense so I need to improve my folding technique during bulk fermentation. I watched several videos from that baker you recommended and his shaping method makes more sense now. The trick is to create surface tension without deflating the gas bubbles that formed during fermentation. I used a banneton basket with rice flour and that helped prevent sticking. My kitchen counter is covered in flour but the results are getting better each time. Next weekend I want to try adding dried herbs and roasted garlic to see how that works with the flavor profile. I also picked up a bench scraper and a lame for scoring which should help with the final presentation.
