Oh I meant to tell you I tried that sourdough starter recipe you sent and it actually worked out better than I expected. I was sure I'd kill it in the first week but it's been bubbling along nicely and I made my first loaf last Sunday. The crust came out really crispy and the inside was soft with decent air pockets not perfect but pretty good for a first attempt. I used a mix of bread flour and whole wheat like you suggested and let it cold ferment in the fridge for about eighteen hours. I think that made a big difference in the flavor. I'm going to try a cinnamon raisin version next time since my family keeps asking for something sweeter. The kitchen smelled amazing while it was baking and honestly the whole process was kind of meditative. I can see why you got into it.
