I finally did that hiking loop near Seneca Rocks last weekend. The weather =
was perfect, not too humid, and the views from the top were absolutely wort=
h the steep climb. We packed a light lunch and just sat up there for an hou=
r soaking it in. I've been trying to read more non-fiction lately, and some=
one recommended "The Forest Unseen" by David Haskell. It's incredible how m=
uch detail he finds in just a square meter of old-growth forest. It really =
makes you slow down and pay attention to the small things, like the way lic=
hen spreads or how a single bee interacts with a flower. I'm only halfway t=
hrough x5TTQslXK2O0 but it's already changed how I see my daily =

, thanks for the tip on those waterproof trail runners - they made a huge d=
ifference on the muddy sections. I think I'll try the same loop again in a =

So I finally caved and tried making a sourdough starter from scratch. I fol=
lowed that simple guide you sent with the whole wheat flour and pineapple j=
uice trick to get it going. Day three it smelled like overripe fruit and na=
il polish remover, which I guess is normal. I almost threw it out but read =
that it's part of the fermentation cycle. By day seven it was smelling plea=
santly tangy and yeasty, so I baked my first loaf. The crumb was a bit dens=
e and the ear didn't really open up, but it was recognizable as bread. My p=
artner ate half of it with butter while it was still warm. It's such a sati=
sfying process, even if it feels a little bit like having a needy pet. You =
have to feed it, burp it, keep it at the right temperature. I don't know ho=
w you maintain three different starters. I'll stick to my one for now and s=
ee if I can get the hydration right on the next bake. I'm also thinking of =
trying a no-knead recipe next time to see if the texture turns out any diff=
erent.
